Vellarikaai Kootu
Ingredients
Yellow Cucumber - 1 cup
Coconut - 1/2 cup
Red chilli - 1 no.
Musturd - 1 tsp
Coconut oil - 1 tsp
Turmeric powder - 1 tsp
Salt - to taste
Method
Boil the cucumber and keep it aside.
Grind the coconut along with red chilli into a fine paste.
In a Kadai, add oil, musturd and let it splutter.
Now add cooked cucumber, salt and turmeric powder along with 1 cup of water.
Let it cook for 5 mins.
Now add grounded paste and mix well.
Add water if required and boil well.
Once the raw flavour of coconut vanishes, and had become thick, turn off the flame.
Serve it hot with sambar, kaarakozhambu, rasam or any spicy rice.
