Rice - 1cup
Butter - 1 tbsp
Bread slices - 4
Onions - 1 cup
Tomato - 1/2 cup
Green chillies - 1 no.
Ginger garlic - 2 tsp (freshly crushed)
Mixed vegs - 1 cup
Turmeric powder - 1 tsp
Red chilli powder - 1 tsp
Kasuri methi - 1 tsp
Spices:
Cloves - 4
Elaachi - 2
Cinnamon stick - 1
Bay leaves - 1 or 2
Star anise - 1
Coconut milk - 2 cup (1 cup diluted and 1 cup concentrated)
Pudhina - handful
Water - 1/2 cup
Method
In a Kadai, add ghee and bread slices to it.
Roast it well and keep it aside.
In a cooker, add ghee, spices and crushed ginger garlic. Let the raw flavor vanish.
Now add onions, green chillies and mix well.
Once onions start turning into transparent, add tomatoes, red chilli powder and turmeric powder. Cook well.
Add mixed vegs and mix well.
Add Pudhina and cook well.
Add rice to it and mix well.
Now add the coconut milk and let it boil for one min. Now add salt and mix well.
Add fried bread pieces and Kasuri methi.
Add water and cook well.
Note: Consistency of the rice and proportion is very important.
