Mathan upperi
Ingredients
Yellow pumpkins - 1 cup
Coconut - 1 tbsp (grated)
Green chillies - 1 tsp (crushed)
Coconut oil - 1 tsp
Musturd - 1 tsp
Urad dal - 1 tsp
Salt - to taste
Curry leaves - 5 no.s
Turmeric powder - 1 tsp
Method
In a Kadai, add oil, musturd and Urad dal. Let it splutter.
Add the crushed chillies and coconut along with turmeric powder.
Keep stirring till the color of coconut slightly changes.
Add yellow pumpkins and salt.
Mix well and add 2 tbsp of water.
Close it with lid and cook well.
Once the pumkin pieces get cooked well, turn off the flame.
Serve it hot with any spicy rice varieties or sambar rice, morkozhambu or rasam rice.
