Vegetable pulav with coconut milk version 2 (white pulav)



White pulav 
Ingredients 
Basmathi rice - 1 cup 
Coconut milk - 2 cup (1 cup thick + 1 cup diluted) 
Onions - 1/2 cup 
Tomato - 1/2 cup 
Pudhina
Mixed veg.s - 1 cup 
Salt - to taste 
Crushed ginger and garlic - 2 tsp
Gingali oil - 1/2 tbsp

Spices:
Bay leaves - 1
Cinnamon sticks - 1
Cloves - 3 no.s 
Elaachi - 2 no.s 
Green chillies - 2 no.s 
Method 
Add oil and spices, crushed ginger-garlic and keep mixing till it looses the raw flavor. 
Now add onions and cook well till it turns to be translucent.
Add tomatoes, salt and cook well. 
Add Pudhina and cook well. 
Now add the remaining mixed vegs and keep mixing. 
Add the diluted coconut milk and rice, mix well. Check if whether we need to add some more amount salt. 
Now add the thick coconut milk, close it with its lid and cook well. 
Our white pulav is ready, serve it hot with raitha, pappad or any spicy curries.
