Potato roast version 1



Potato roast 
Ingredients 
Potato - 2 cups chopped
Gingali oil - 2 tsp 
Musturd - 1 tsp
Urad dal - 1 tsp 
Chenna dal - 1 tsp 
Turmeric powder - 1 tsp 
Red chilli powder - 1 tsp
Asafortida - 1 tsp
Salt - to taste 
Curry leaves - handful 
Method 
Parboil the potatoes by adding turmeric powder and salt to it. 
Now drain the water and keep it aside to red. 
In a tawa, add gingali oil and potatoes.

Roast each pieces well.

Remove the potato pieces. 
Add musturd, Urad dal, curry leaves into the remaining oil on the tawa and add the potatoes too. 
Now add red chilli powder and cook till the raw smell vanishes. 
Now add asafortida to it before turning off the flame. 
Serve them hot. 
Note: The potato should not be mashy and watery. U can serve it with any variety rice.
