Tomato rice 







Ingredients 

Raw rice - 2 cup (cooked) 
Tomato - 1 cup (chopped) 
Onion - 1 cup (chopped) 
Green chillies - 1 (chopped) 
Coriander leaves - handful 
Red chilli powder - 2 tsp 
Turmeric powder - 1 tsp 
Ghee - 4 tsp 
Musturd - 1 tsp 
Urad dal - 1 tsp (optional)
Cashews - 5no.s
Salt - to taste

Method 

In a kadai, add ghee and musturd, let it splutter. 
Now add cashews, Urad dal, green chillies and onions. 
Once the onions reach the translucent stage, add tomatoes, turmeric powder and salt. 
Cook well till it turns to be mashy consistency and tomatoes get cooked well. 
Now add red chilli powder and mix well. 
Cook well till the raw smell of chilli powder vanishes. 
Now add cooked rice and mix well for 4 mins in low flame. 
Now add coriander leaves and serve them hot with pappad or potato roast. 
Note: See through that the tomato doesn't get burned. Add water if it turns to be dry.
