POTATO BONDA
Ingredients :
Boiled potatoes (boiled and smashed - unsalted) - 4 no.s
Coriander leaves(finely chopped) - 1/2 cup
Green chillies (finely chopped) - 4 no.s
Lemon - 1 no.
Chennadaal powder (flour) - 1 cup
Rice flour - 1/2 cup
Asafortida - 1tsp
Red chilli powder - 2tsp
Coconut Oil - to fry
Gingali oil - for tempering
Mustard - 1 tsp
Turmeric powder - 2 pinches
Water - as required
Salt - to taste
Method:
Potato mixture for stuffing
In a pan, add gingali oil and add musturd and turmeric powder for tempering.
Smash the boiled potatoes.
Add salt, green chillies and coriander leaves to the potatoes.
Add the popped musturd along with the oil and mix well.
Now the potatoes color get changed and turn into lemon yellow.
Now cut the lemon and squeeze it after removing the seeds into the potato mixture.
Batter
In a bowl, add rice flour, chennadaal flour, red chilli powder, asafortida, salt and water. Mix well.
Pour oil into Kadai, once the oil reaches the high temperature, keep it in sim.
Now make small-small balls (lemon sized) out of the potato mixture and dip them into the batter.
Drop these into hot oil and wait till turns golden orange or crispy.
Serve these bondas with coconut chutney.
Me, being a iyer Aathu ponnu, love bondas without onions or garlic. But I eat them with tomato ketchup. I still remember how my maternal and paternal grandma used to surprise me by making these bonda before I come back from my school or wake up from sleep. These are highly aromatic..and we can't stop with one or two. I love chillies, so I added more chillies, if you are unlike me, reduce the amount of chillies and red chilli powder.
