Ingredients
Basmathi rice - 1cup
Onions - 1/2 cup (chopped)
Tomato - 1/2 cup (chopped)
Carrot and bean - 1 cup (mixed)
Turmeric powder - 1 tsp
Red chilli powder - 2 tsp
Jeera Dhanya powder - 1 tsp
Ghee/gingali oil - 2 tsp
Elaachi - 2
Bay leaves - 1
Cinnamon sticks - 1
Star anise - 1
Green chillies - 2
Coconut milk - 1 cup thick and 1 cup diluted
Pudhina - handful
Coriander leaves - handful
Salt - to taste
To paste
Ginger and garlic - 2tsp (freshly crushed)
Onions - 1/2cup
Tomatoes - 1/2cup
Pepper - 1tsp
Cloves - 2
Fennel seeds - 1tsp
Oil/ghee - 2tsp
Method
In a cooker, add ghee, cloves, fennel seeds, pepper and ginger garlic paste. Cook till the raw smell vanishes
Now add onions, let onions turn slightly brown and now add tomatoes. Cook well.
Let it cool down and grind it well.
Now in the same cooker, add ghee, cinnamon sticks, star anise, bay leaves, onions, partial amount of pudhina and Cook well.
Now add the paste, add tomatoes. Cook well.
Now add chilli powder, turmeric powder, jeera dhanya powder and let the raw smell vanish.
Now add other vegs and green chillies.
Add rice to it and mix well. Now add elaachi and diluted coconut milk (rendaam paal) and mix well.
Once it starts boiling, add thick coconut milk (Onaam paal). Close the cooker with lid and pressure cook for 10mins on high flame.
Open the cooker, add the remaining Pudhina and coriander leaves to garnish.
Note: If the Basmathi rice is not a branded one or a old one, u can pressure cook for 7 mins max by adding half cup of diluted coconut milk and 1 cup of thick milk. So that u vil get the correct consistency of rice.
