Veg Dum Biriyani



Vegetable dum biriyani 



Ingredients

To prepare rice:

Basmathi rice - 1 cup
Pudhina - (chopped) handful
Elaachi - 2 no.s
Bay leaves - 1.5
Kasuri methi - 1 pinch
Ghee - 1 tsp
Cloves - 2 no.s
Salt - as required

For gravy:

Ghee - 1 tbsp
Ginger garlic (freshly crushed) - 2 tsp
Cinnamon stick - 1
Bay leaves - 1 no.
Cloves - 2no.s
Elaachi - 2 tsp
Onion - 1.5 cup
Tomato - 1 cup
Mixed vegs - 1 cup
Red chilli powder - 2 tsp
Kasuri methi - 1 pinch
Garam masala (home made) - 1 spoon (optional)

To kesar essence:

Curd - 2 tsp
Kumkum poo - 1 pinch

Onions and cashews - fried in ghee - 1 cup
Bread - fried in ghee -1/2 cup
2tsp of Kasuri methi and Handful of Pudhina and coriander leaves for garnishing

Method

Parboil the rice along with pudhina, cloves, cinnamon, elachi, bay leaves, kasthuri methi(optional), drop of ghee and salt

Add 1tblspoon of ghee, garlic - ginger paste, let the raw flavor vanish.
Now add cinnamon, bay leaves, cloves, elachi, onion, let it get cooked well.

Now add tomato, salt, cook well, add red chilli powder, mixed vegetables, cook well.
Add garam masala(optional), pudhina, kasthuri methi(optional) and make it like thick gravy.

In curd and add kesari powder or kumkumpoo and keep it aside.

Fry onions + cashews and bread in ghee well and keep it aside.
In a heavy bottom vessel, add little ghee, add 1/3rd of parboiled rice.

Add pudhina, fried onions, drops of kesar mixture and add the gravy on top of it.

Repeat the same again and again and make layers of it.

Close it ti8ly with a lid (U can use atta dough to get dum)
Keep it in low flame for 10-20 mins and hav spicy dum biriyani❤

Note:
See through tat ur top most layer is rice with fried onions and pudhina toping.

Biriyani is something which most of us love. This is my version of veg dum biriyani.
