Idly podi or Kalathu Molaga podi
Ingredients:
Red chillies - 40
Urad dal - 4 cup
Yellu (sesame seeds) - 4 tsp
Chutney kadalai - 1 cup
Asafortida - 4 tsp
Jaggery - 2 tsp
Salt - to taste
Method:
Wash the sesame seeds and dry them by spreading and leaving them to rest.
Dry roast red chillies, Urad dal, sesame seeds and chutney kadalai separately till they turn into golden color.
Add all the dry roasted ingredients and asafortida into a bowl to rest.
Once the mixture cools down, add it to the mixer grinder and grind coarsely.
Now add salt and jaggery to it and grind well.
Our spicy and aromatic idly podi or Kalathu Molaga podi is ready. Enjoy them by mixing in ghee and Gingali oil.
Note:
All the above proportions are inaccordance the personal preferences of flavors.
If we are doing this for kids and old people, we can reduce the number of chillies and add Urad dal.
Also the hotness of chillies varies from one region to another. Thus, we can add or reduce inaccordance to it.
Add only jaggery powder, do not add jaggery syrup to it.
We can grind them coarsely if we like to have the tiny bits and pieces of dal and other ingredients.
I prefer and always grind it nicely bcoz I wish to have the taste on each individual pinch of it.
